The invention relates to liquid and/or lyophilized and/or thermally dried probiotic galactic bacteria liable to be immobilized either into dried fruit (e.g. into entire, fragmented, fresh or dried pistachios and almonds) or into pastry products (e.g. entire or fragmented biscuits) or into combination of these ingredients. Said bacteria can be utilised for the industrial or handicraft preparation of any-type probiotic ice cream, for the enhancement of the operational and beneficial activity of the product as well as for the improvement of the nutritional components of this last.
