The present invention relates to a fruit and vegetable beverage composition using paprika extracts which enhances the flavor of a beverage and exhibits an excellent effect as the vegetable health beverage and a manufacturing method thereof. A fruit and vegetable beverage using paprika extracts according to the present invention comprises 80.97 weight percent (w/v%) of paprika extracts, 2.5 weight percent (w/v%) of isomaltooligosaccharides, 3.4 weight percent (w/v%) of liquid fructose, 1.2 weight percent (w/v%) of white sugar, 0.5 weight percent (w/v%) of tomato paste, 0.7 weight percent (w/v%) of purple sweet potato pigment, 0.02 weight percent (w/v%) of complex scutellaria baicalensis extracts, 0.21 weight percent (w/v%) of citric acids, and 10.5 weight percent (w/v%) of apple concentrates. The present invention provide the fruit and vegetable beverage with excellent functionality by digitalizing the optimal mixing ratio of acid degree and sugar degree which is the important element in mixing through experimental data. |
