The present invention relates to a method for preparing noodle comprising the steps of: (a) cleaning barley sprouts after cutting; (b) preparing the barley sprout powder by freeze drying and grinding the cleaned barley sprouts; (c) mixing and kneading the prepared barley sprout powder together with salt, wheat flour or rice flour; (d) molding the mixed batter by extruding. The noodle which is manufactured through the method of the present invention contains potassium, calcium, vitamin C and all kinds of enhanced minerals including magnesium, copper, zinc, and the like; and is expected to have an effect to prevent adult diseases through anti-diabetic effects and dissolution of oxygen free radicals. Furthermore, the noodle which is manufactured through the method of the present invention has improved color preference, taste, and flavor, thereby improving the overall preference. |
