PURPOSE: A ketchup composition is provided to offer the unique spicy and clean taste of red pepper to the sweet and sour taste of ketchup. CONSTITUTION: A ketchup composition contains 30-40 wt% of tomato paste, 10-20 wt% of sugar, 10-20 wt% of vinegar, 5-15 wt% of red pepper puree, 5-20 wt% of saccharide, 0.5-5 wt% of red pepper powder, 1-5 wt% of Cheongyang pepper puree, 1-5 wt% of Japanese apricot extract, 1-5 wt% of salt, 0.5-3 wt% of lemon juice, 0.5-3 wt% of refined rice wine, 0.1-3 wt% of grape seed oil, 0.1-1 wt% of black pepper powder, and 0.1-3 wt% of herbs. |
