The present invention relates to phytosterols as ultra-fine water soluble dispersion particles. The present invention provides a composition containing ultra-fine water soluble phytosterols, which contains 1-20% of phytosterols, 1-20% of emulsifier and the residual amount of purified water at weight%, and is uniformly dispersed with phytosterols of less than 300 nm size. The manufacturing method of the composition according to the present invention comprises a step of mixing 1-20% of phytosterols, 1-20% of emulsifier and the residual amount of purified water at weight%; an emulsification step of dispersing the emulsifier by using a high shear mixer in room temperature to the mixture; an ultra-fine atomization step of atomizing the phytosterol particles into less than 300 nm for 15-25 hours by using a high pressure homogenizer. The present invention is able to obtain phytosterols with an excellent dispersion on water capable of increasing the bioavailability through a more convenient process without degrading the properties of phytosterols in the manufacturing process as a process of applying heat is not included during the manufacturing processes contrary to the conventional inventions, and the obtained particle size is ultra-fine and uniform. |
