PROBLEM TO BE SOLVED: To provide 1- or 6-deoxy products corresponding to all of aldohexoses, ketohexoses and sugar alcohols based on Deoxy-Izumoring.SOLUTION: There is provided a new compound, which is deoxyhexose or its derivative, among 1-deoxy D-ketohexose, 6-deoxy D-ketohexose, 1-deoxy L-ketohexose or 6-deoxy L-ketohexose, produced by epimerizing their ketohexoses at a position 3 by using deoxy ketohexose isomerase derived from pseudomonas cichorii ST-24 (FERM BP-2736).
