PROBLEM TO BE SOLVED: To provide applications of sequence information relating to pyranosone dehydratase.SOLUTION: A use of pyranosone dehydratase in the conversion of AF (1,5-anhydro-D-fructose) to APP (ascopyrone P) and microthecin and the conversion of glucosone to cortalcerone is related. A polypeptide of a specific sequence is comprised, which is selected from: (i) a polynucleotide comprising the nucleotide sequence of a specific sequence or the complement thereof; (ii) a polynucleotide comprising a nucleotide sequence capable of hybridizing to the nucleotide sequence of the specific sequence, or a fragment thereof; (iii) a polynucleotide comprising a nucleotide sequence capable of hybridizing to the complement of the nucleotide sequence of the specific sequence; and (iv) a polynucleotide comprising a nucleotide sequence which is degenerated as a result of the genetic code to the polynucleotide of the specific sequence.
