The present invention relates to a production method of tangerine slices preserved in honey which comprises the following steps: dipping tangerine in salt water, and washing the tangerine with vinegar; cutting the tangerine to the vertical direction to obtain tangerine slices; inserting the tangerine slices into a preserving container; inserting syrup containing ginger juice and pine needle juice into the preserving container for preserving; separating the preserved tangerine slices, and cooling; and aging and freezing the cooled tangerine slices in a freezing chamber. The present invention provides the tangerine slices preserved in honey which has high contents of vitamins A, C, and E, and improved palatability, and is helpful for fatigue relief, skin care, and cold and artery hardening prevention. The ginger juice containing gingerol, and the pine needle juice containing vitamins and minerals are used for the tangerine slices preserved in honey for protecting intestines, and to offer anti-oxidation, fatigue relief, skin care, bronchitis and hypertension prevention, cholesterol reduction, and immunity improvement functions. Oligosaccharide with low calories is used to prevent obesity, control blood sugar, reduce cholesterol, and improve immunity. Aging in the freezing chamber improves taste, flavor, palatability, and quality of the slices.
