摘要 Provided is a frozen noodle that exhibits a low occurrence of freezer burn. The production method for this frozen noodle includes: a step in which a composition that contains at least water, oil/fat, and a polysaccharide thickener and that has a viscosity of 30-2000 mPa·s at 60 °C is affixed to cooked noodles; and a step in which the noodles to which the composition has been affixed are frozen.
