PROBLEM TO BE SOLVED: To provide a warm-water yeast obtained by significantly controlling syneresis, a method for producing the warm-water yeast, and dough for a bakery product produced by using the warm-water yeast in which the syneresis is significantly controlled, and to provide a bakery product.SOLUTION: A warm-water yeast is prepared by kneading a starch raw material in the presence of a maltogenic α-amylase, and dough for a bakery product is obtained from the warm-water yeast and is heat treated to obtain a bakery product. |
