The present invention relates to a method of manufacturing rice including rutin from Fagopyrum tataricum sprouts using supercritical processing which comprises the following steps: growing Fagopyrum tataricum sprouts; washing the Fagopyrum tataricum sprouts, and dipping in distilled water or ethanol to extract rutin; decompress concentrating the rutin extract to obtain rutin concentrate; inserting the rutin concentrate into a high pressure chamber of a supercritical processing device with rice and liquid carbon dioxide for supercritical processing the rice; and drying the supercritical processed rice with hot air. By the present invention, the unique taste and flavor of the rice is maintained and the functional rutin rice containing rutin extracted from the Fagopyrum tataricum sprouts in pores is produced without the quality change. The liquid carbon dioxide is inserted in a supercritical fluid form to insert the rutin into the pores of the rice instead of the surface of the rice.
