PROBLEM TO BE SOLVED: To provide a garlic sprout fine powdery substance soft compared to garlic sprouts obtained by soil culture, having mellow taste and flavor, as yellowish white vegetable high in a nutrition value, obtained by water culture, and having antioxidant activity.SOLUTION: A garlic sprout powdery substance is obtained by drying yellowish white garlic sprouts obtained by water culturing garlic bulbs in a dark room state, finely cutting the product, and pulverizing the cut garlic sprouts in a fine powdery state. The garlic sprout fine powdery substance has high antioxidant activity such as superoxide (SOD)-erasing activity, hydroxy radical-erasing activity and singlet oxygen-removing activity, and high applicability for health food, and specific supplement food, and is usable as food seasoning, and food flavoring. |
