<P>PROBLEM TO BE SOLVED: To provide a means capable of efficiently incorporating a useful component, such as a polyphenol, into an edible oil. <P>SOLUTION: A method used for producing an edible oil is provided, which method is characterized so that, in squeezing an edible oil from an oil-containing raw material, lipase inherent in the oil-containing raw material is applied so as to control the diacylglycerol content in fat and oil obtained after oil squeezing to be 4 mass% or higher and then oil squeezing is performed. <P>COPYRIGHT: (C)2009,JPO&INPIT |
