The present invention relates to noodles with pores and a manufacturing method therefor, wherein the noodles can be quickly cooked and at the same time, seasoning can evenly permeate through the noodles, thereby improving the chewy texture of the noodles. The method for manufacturing noodles with pores, according to one embodiment of the present invention, comprises the steps of: (S1) inserting dough having a mixture of grains and salt water into an extruder; (S2) extruding the dough in the form of noodles by allowing the dough inserted into the extruder to pass through an outlet of the extruder; (S3) forming pores, in the noodles which have passed through the extruder, by using a punching machine having a plurality of needle assemblies arranged along a discharging direction of the extruded noodles; and (S4) cutting and drying the noodles having the pores formed thereon. |
