PROBLEM TO BE SOLVED: To provide a gelatinous food that is high in calory and low in protein content, which enables an aged person who is suffering from a kidney disease: to easily grind the food itself in his or her mouth and swallow it without its scattering and adhering in the mouth; and to take in sufficient nourishment even if it is taken in a small quantity.SOLUTION: A gelatinous food contains: (a) 10-40 mass% of oils and fats; (b) 0.3-0.6 mass% of an emulsifier; (c) 0.2-0.4 mass% of agar; and (d) 5-20 mass% of one or more materials selected from the paste and puree of vegetable and fruit. |
