The system (1) has adjacent blades (2a, 2b) mounted on arms (3a, 3b) that are mounted in a driving device (4). The driving device drives the blades along an alternate oscillating movement with horizontal and vertical components in a vertical symmetric plane. Each arm is equipped with counterweight devices (6a, 6b) including cradles (62a, 62b) that are fixed to the arms. The cradles carry counterweights (61a, 61b) located on a side of the plane opposite to the arms such that each arm with the blade and the counterweight devices have a center of gravity in the plane and a null inertia product. An independent claim is also included for a machine of longitudinal cutting of animal carcasses suspended vertically with an aerial conveyor in a butcher shop, including a cutting system.
