The present invention relates a method for dehydrating agricultural products and, more specifically, a dehydration method for agricultural products comprising: a step for dehydrating sliced agricultural products; a step for freezing the dehydrated agricultural products; a step for pressurizing or decompressing the frozen agricultural products. The dehydration method according to the present invention provides dehydrated solid state agricultural product which are capable of long term storages since the agricultural products which of the moisture is removed. As the water dehydrated from the agricultural products contains nutritional contents in the agricultural products, the water is able to be used as a material for the functionality of other liquid type food: industrially applicable.
