PURPOSE: A rice processing method of brewing is provided to spray pure rice wine to rice soaked in water before aging to use the rice for brewing. CONSTITUTION: Rice is soaked in water for 7-12 hours. 2-10 parts by weight of pure rice wine are sprayed to 100 parts by weight of water soaked rice. The rice is aged for 1-15 days, and the rice is stirred upside down 1-2 times a day during the aging process. 1-20 parts by weight of mung bean juice are mixed with 100 parts by weight of pure rice wine. |
