The invention relates to an apparatus and a method for forming and calibrating dough disk elements. The apparatus comprises a working surface (2) for supporting one or more lumps (P), a pressing die (4) which is vertically movable between a distal position and a proximal position relative to the working surface (2) to press the dough (P) and form the disk element (D), a retention ring element (5), which is also movable between a rest position away from the surface (2) and a work position substantially in contact therewith for laterally retaining the pressed dough (P) and actuator means (6) operating on the press (4) and the ring element (5) for imparting a reciprocating motion towards and away from the working surface (2). The actuator means (6) include control means (7) operating on the pressing die (4) and on the ring element (5) to adjust the reciprocating motion for the pressing die (4) for the latter to only reach the proximal position when the ring element (5) has reached the work position.
