PROBLEM TO BE SOLVED: To provide a method for producing a serge fermentation extract having weak side effects, and having excellent skin bleaching effect.SOLUTION: A serge fermentation extract having skin bleaching effect is a derivative obtained by ester-bonding anthocyanin with tripeptide. The serge fermentation extract controls production of melanin by showing tyrosinase inhibitory action, and exhibits bleaching effect caused by antioxidant action by a hydroxy group. In a production method thereof, a fermented product obtained by adding Monascus purpureus to an organic serge fruit ground product and a rice bran ground product to be fermented is subjected to alkali reducing treatment. The organic serge is a fruit of Elaeagnaceae, and is utilized for food or as a folk medicine. Anthocyanin is ester-bonded with tripeptide by fermenting the organic serge fruit ground product and the rice bran with Monascus purpureus, and stable maintenance can be obtained by the reducing treatment. The tripeptide comprises lysine, glycine and lysine. |
