PROBLEM TO BE SOLVED: To provide a freezing/thawing method and a freezing/thawing system of pasta with rice flour, which enable chewy pasta with rice flour to be provided in a short time after an order is received.SOLUTION: A freezing/thawing system of pasta with rice flour includes: a boiling apparatus 12 that boils the pasta with rice flour for only a shortened boil time at least 20 seconds shorter than a defined boiling time; a quick freezing apparatus 14 that freezes the boiled pasta with rice flour by blowing cold air with a temperature from -50 to -20°C at a wind speed from 0.5 to 30 m/second; a transportation machine 20 that has a freezer 18 for transportation that stores the frozen pasta with rice flour at a temperature of -18°C or lower; a freezer 22 for store storage that stores the transported pasta with rice flour at a temperature of -18°C or lower; and a quick thawing apparatus 24 that holds the pasta with rice flour, having stored in the freezer 22 for store storage, in steam with gauge pressure from 0.02 to 0.1 MPa for only a thawing time of 20 to 60 seconds.
