<P>PROBLEM TO BE SOLVED: To provide a high-moisture sheet-like water-in-oil emulsified oil-and-fat composition enabling to obtain a danish pastry having good folding workability, inner layer condition, float and volume, and having moist palate feeling with good fit feeling in the mouth regardless of its high moisture; and to provide a danish pastry using the composition. <P>SOLUTION: The high-moisture sheet-like water-in-oil emulsified oil-and-fat composition includes 30-50 wt.% of water content in the whole of the composition, and contains an emulsifier, a thickener and fibers.
