FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to food products enrichment with (arabin) xylan oligosaccharides. The (arabin) xylan oligosaccharides composition production method envisages vegetal raw material mashing in water and treatment with endo-xylanase at the corresponding concentration for enzyme depolymerisation of the arabinoxylanase fraction. Then the said vegetal raw material subjected to mashing is divided into a fraction insoluble in water and a fraction solubilised with water. The fraction solubilised with water contains solubilised (arabin) xylan oligosaccharides. Then one performs purification of the said fraction solubilised with water by way of ion-exchange chromatography on a strongly acidic cation-exchange resin and then - on a weakly basic anion-exchange resin. The produced (arabin) xylan oligosaccharides have average polymerisation degree equal to 4 - 10 and average degree of arabinose substitution equal to 0.15 - 0.35. The nitrogen content in the said composition is equal to 0.16% (wt/wt) or less in terms of total dry weight of the said composition.
