Glutamate decarboxylase purified from Thermococcus kodakarensis KOD1 and Methods for producing high purity GABA

PURPOSE: A recombinant expression vector and a transformant for producing glutamate decarboxylase with improved heat resistance are provided to produce high purity GABA. CONSTITUTION: A glutamate decarboxylase(GAD) has an amino acid sequence of sequence number 1. The enzyme is isolated from Thermococcus kodakarensis KOD1 and improves heat resistance. A GAD gene encodes an amino acid sequence of sequence number 1 and has a base of sequence number 2. A recombinant expression vector contains the gene. A transformed for preparing the enzyme contains the expression vector. A method for producing GABA comprises: a step of isolating the enzyme from Thermococcus kodakarensis KOD1; a step of cloning the gene to the recombinant vector; a step of preparing the enzyme; and a step of adding the enzyme to a monosodium glutamate substrate.
