摘要 PROBLEM TO BE SOLVED: To produce pretzel without crushing pretzel dough or making the shape of pretzel dough defective even with sufficient final fermentation in performing alkali treatment when producing pretzel, while remarkably improving production work efficiency, and furthermore smoothly washing away an extra alkaline solution or neutralizing it so as not to remain.SOLUTION: A method for producing pretzel, in which steps up to final fermentation employs a usual step, includes placing pretzel dough subjected to final fermentation, into a frozen or semi-frozen state before performing alkali treatment, and then baking.
