Producing poultry raw sausage, preferably poultry salami, comprises combining sausage meat and crushed nuts or crushed oil seeds and/or combining sausage meat and nuts or oilseeds and crushing the nuts or oil seeds. Independent claims are also included for: (1) the poultry raw sausage, preferably poultry salami comprising sausage meat, chopped nuts and/or oilseeds, where the proportion of crushed nuts and/or crushed oilseeds is at least 14 wt.%, preferably 20 wt.% based on the total weight of the poultry raw sausage; and (2) use of crushed nuts and/or oilseed for the stabilization of bacon free, fat from other animals as feathered free, palm fat free and hardened vegetable oil free poultry raw sausage, preferably poultry salami. |
