PURPOSE: A production method of fermented soybean paste containing a Sasa borealis extract is provided to use water-soluble components extracted from Sasa borealis using enzymes and hot water. CONSTITUTION: Soybeans are assorted (S110). The assorted soybeans are washed, and soaked in water (S120). The soaked soybeans are steamed for 7-8 hours (S130). The steamed soybeans are mixed with a Sasa borealis enzyme extract (S140). The mixture is crushed (S150). The crushed mixture is inserted into a frame to obtain soybean blocks (S160). The soybean blocks are aged for 40 days (S170). The aged soybean blocks are firstly aged in salt water (S180). The soybean blocks are separated from the firstly aged mixture, and the Sasa borealis enzyme extract, mushroom powder, and red pepper powder are inserted into the soybean blocks (S190). The mixture is secondly aged (S200).
