PURPOSE: A loosening prevention agent of grain processed food is provided to effectively produce the delicious grain processed food, and to control the quality degradation of the grain processed food. CONSTITUTION: A loosening prevention agent of grain processed food contains water-soluble hemicellulose, lecithin, and stearoyl lactate. The water-soluble hemicellulose is derived from beans. The grain processed food contains the loosening prevention agent, or the surface of the grain processed food is processed with the loosening prevention agent. 0.01-20 wt% of water-soluble hemicelluloses, 0.001-5 wt% of lecithin, and 0.001-5 wt% of stearoyl lactate is contained for the grain processed food. |
