摘要 PROBLEM TO BE SOLVED: To provide a rice flour with which a bread dough having no stickiness and excellent in machine resistance is prepared, and a rice flour bread well raised, having uniform texture, glutinous palate feeling, and no caving where its side surface and/or its top surface recessed, can be produced; and to provide a rice flour composition.SOLUTION: A rice flour satisfies the following requirement (A)-(D): (A) a median diameter (D50) based on cumulative distribution of the particle diameter of rice flour is 30-80 μm; (B) a specific surface area (Sw) is ≥1,400 cm/g; (C) a specific surface area coefficient (Sw/S) obtained by dividing the specific surface area (S)(cm/g) with a specific area (S)(cm/g) calculated supposing every rice flour is a sphere having the median diameter D50 (μm), as the diameter, is 2 or more; and (D) the damage degree of starch is 5-10%. The rice flour composition contains the rice flour.
