PROBLEM TO BE SOLVED: To provide a new lactic acid fermentation method using a persimmon as a fermentation raw material, and allowing high-density lactic acid fermentation.SOLUTION: In this lactic acid fermentation method, by adding a lactic acid bacteria starter to a fermentation raw material including thawed persimmons obtained by freezing and thereafter thawing tannin-eliminated persimmons and fermenting it, it can be fermented with high density such that a total viable bacterial count of lactic acid bacteria exceeds 1×10cfu/mL, preferably 1×10cfu/mL. Therefor, by utilizing the lactic acid fermentation method, functional food or feed containing lactic acid bacteria with high density can be provided. |
