PURPOSE: A soluble fraction of traditional soy bean sauce with anti-inflammatory activity is provided to have a compound or peptide of which the molecular weights are over 1kDa from the extracts of traditional soy bean sauce. CONSTITUTION: 5-20 times of water and extracted at a room temperature for 1-12 hours. Salt is removed from the traditional soy bean sauce. The water extracts without salt from the Korean traditional soy bean sauce is mixed with 5-20 times of water and the fraction is obtained according to the molecular weight through an ultrafiltration at a temperature of 1-20°C.
