PURPOSE: A production method of low salinity dried croaker is provided to produce the dried croaker with excellent storage property without fishy smell and decomposing smell. CONSTITUTION: Phellinus linteus, molokhia, ginger, and rice straws are dried into the water content within 5%, and are crushed into 5-10 um. The crushed Phellinus linteus, molokhia, ginger, and rice straws are mixed in a volume ratio of 60:20:10:10. The mixed powder is mixed with purified water in a volume ratio of 50:50. The mixture is fermented at 25-40°C for 3-15 days. The fermented material and purified water are mixed in a weight ratio of 1:2, and the material is extracted for 1-3 hours at a low temperature of 40-55°C. The extract is filtered and cooled at 10-20°C. The cooled extract is mixed with salt to obtain an aging solution with the salinity of 10-15%. Croaker is dipped in the aging solution, and aged for 5-20 hours. The croaker is dried, and tied with the rice straws before drying at 30-35°C into the water content of 32-50% using hot air. |
