PURPOSE: A premix composition and a manufacturing method of mold food are provided to be able to manufacture mold food with an excellent mold release property and to do mass production and frozen distribution. CONSTITUTION: A premix composition for mold food includes 100 parts by weight of rice flour, 10-100 parts by weight of tapioca modified starch and 10-60 parts by weight of glutinous rice flour. The rice flour is dry rice flour by dry pulverization, dry rice flour by wet pulverization, alpha rice flour or their mixture. The tapioca modified starch is selected from acetylation modified starch, etherification modified starch and esterification modified starch of tapioca. The premix composition for mold food further includes 5-35 parts by weight of edible fats and oil, 1-20 parts by weight of powder fat and 1-20 parts by weight of modified starch. The edible fats and oil is soybean oil, margarine, butter, shortening or their mixture. The powder fat is at least one selected from vegetable fat powder and animal fat powder. The modified starch is acetylation modified starch, etherification modified starch or esterification modified starch of at least one starch selected from potato starch, wheat starch, waxy corn starch, corn starch, rice starch and glutinous rice starch. |
