PROBLEM TO BE SOLVED: To provide a method for manufacturing an oyster extract, capable of efficiently and simply extracting the oyster extract with effective components such as taurine, glycogen and zinc peculiar to the oyster from the oyster which accumulates fucoxanthin without decomposing the fucoxanthin.SOLUTION: This method for manufacturing an oyster extract includes a process (A) and a process (B): the process (A) of obtaining an extract by extracting from an oyster containing fucoxanthin using a solvent containing ethanol and water at the ethanol/water quantity ratio of 55/45-100/0 under 50°C; and the process (B) of solid-liquid separating the extract obtained in the process (A) to obtain an extraction residue and a liquid extract. |
