摘要 PURPOSE: A rice wine which contains selenium and has improved strontium emission and antioxidant activity and a manufacturing method thereof are provided to prevent the accumulation of radioactive strontium in body, to emit the radioactive strontium, to improve antioxidant activity of Sasa borealis, and to improve storage efficiency in a rice wine-manufacturing process. CONSTITUTION: A manufacturing method of a functional rice wine which contains selenium and has improved strontium emission and antioxidant activity comprises a step of manufacturing a hard-boiled rice by using a flour sifter, maintaining sufficient temperature to generate saccharification peracid in the hard-boiled rice by adding mold starter into the hard-boiled rice, and artificially propagating folds; a step of adding 0.5 % of a Sasa borealis powder during a second fermentation; and a step of adding 0.2% of extracted selenium extracted from Phellinus linteus during a third fermentation.
