摘要 The present invention refers to a process for producing starch resistant to alpha-amylase enzyme, which comprises the introduction of crossed links into the native -non-modified starch, by a single step of reactive extrusion, for producing starch resistant to alpha-amylase enzyme. The purpose of the present invention is to provide a novel technique for a unique process intended to prepare resistant starch (RS) or compositions, such as snacks, which include RS that may be added to different food systems in the form of flour, which offers the advantages of an affordable process that allows RS to be prepared containing products of improved quality and quantity.
