摘要 Provided is a seasoning agent which has a meat flavor and can impart both umami and depth and complexity of flavor effectively. That is, provided are: a thermal reaction product of a yeast extract, which is produced by heating a mixture containing a yeast extract and a reducing sugar, wherein furfuryl alcohol and furaneol are contained in amounts of 20 ppm or more and 10 ppm or more, respectively, relative to the amount (dried weight) of the yeast extract; a thermal reaction product of a yeast extract, which is produced by heating a mixture containing a yeast extract and a reducing sugar, wherein furfuryl alcohol and 2-methyl-3-furanthiol are contained in amounts of 20 ppm or more and 1 ppm or more, respectively, relative to the amount (dried weight) of the yeast extract; and a thermally reacted yeast extract seasoning agent comprising any one of the above-mentioned thermal reaction products of yeast extracts.
