The device (1) has a receiver (5) on which a rotatable knife (3) e.g. sickle or circle knife, is attached. A sharpening tool (9) and a rotatable knife are moved relative to each other in such a manner that a cutting edge (11) is sharpened by the sharpening tool. The cutting edge runs at a circumference of the rotatable knife, and a movable measuring unit (13) i.e. cutting edge profile, determines the course of the cutting edge. A controlling unit (15) utilizes the determined cutting course for controlling the relative movement between the sharpening tools and rotatable knife. An independent claim is also included for a method for sharpening rotatable knives for machines for slicing food products.
