PURPOSE: A method of manufacturing ginseng powder is provided to increase the taste and smell of white ginseng and red ginseng by browning reaction products according to non-enzymatic browning reaction. CONSTITUTION: Raw hemp consisting of red ginseng is primarily dried in order to have a moisture content of 12-18 weight%. Foreign substances adhered on the surface of the dried raw hemp is selectively removed. The raw hemp in which the foreign substances are removed is sterilized at a temperature of 95-98°C for 20-30 minutes in the relative humidity of 100% by a heat/moisture process. The sterilized raw hemp is secondarily dried at a temperature of 50-60°C in order to have a moisture content of 7-10 weight%. The raw hemp which is secondarily dried is cut into a fixed size. The cut raw hemp is pulverized into 80-20 mesh through a coarse grinding process and a fine grinding process.
