PURPOSE: A production method of extraction enzyme liquid is provided to produce the extraction concentrated enzyme liquid having excellent flavor and storage property by enzyme processing and lactic acid bacteria fermenting grain embryo buds. CONSTITUTION: Grain embryo bud powder and distilled water are mixed in a ratio of 1:5 to obtain material mixture liquid, and the liquid is extracted in a reactor at 90-100°C for 10-12 hours. The extract is cooled to 37-43°C. The cooled extract is mixed with 2-3 wt% of enzymes, for decomposing fibers, fat, starch, and protein for 8-10 hours. The enzyme processed extract is inoculated with 1-2 wt% of lactic acid bacteria, and the mixture is fermented for 10-12 hours. The fermented extract is filtered, and decompress-concentrated into 1/5. Grain embryo buds are rice, soybean, and wheat embryo buds. The enzymes are cellulase, lipase, amylase, and protease. 15 wt% of aqueous solution is used instead of the distilled water. |
