摘要 FIELD: food industry.SUBSTANCE: invention relates to food and processing industry. The method characterisation is as follows: whole apricots are preliminarily treated in electromagnetic field of microwave with a frequency equal to 2400±50 MHz with power equal to 300 - 500 W during 1.0-1.5 minutes. Then juice with dry substances content equal to 10-12% is extracted from treated apricots with the electric juice extractor; juice yield equal to 65-70%. Then sugar syrup with dry substances content equal to 24-26% is added into the juice. As a result one produces sugar based apricot juice with dry substances content equal to 16-18%.EFFECT: invention ensures improvement of the quality of the juice produced and the juice yield increase.1 ex
