PROBLEM TO BE SOLVED: To provide a gelling agent composition for liquid foods and a gel-like food which can acquire gel facilitating swallowing and sufficiently gives flavor of food by reducing feeling of adhesion, incoherent feeling and paste-like flavor in an oral cavity and which has excellent gelling capability.SOLUTION: This gelling agent composition for liquid foods includes xanthan gum and locust bean gum at a mass ratio of 3:7 to 7:3, and also includes 10-50 mass% of agar-agar with respect to the total mass of the xanthan gum and locust bean gum. In addition, at least one kind of metal salt chosen from sodium salt, potassium salt and magnesium salt is contained in the composition at 15-180 mass% with respect to the total mass of the xanthan gum, locust bean gum and agar-agar. |
