The process for the treatment of fruit and vegetable products (3) comprises the phases of :
- producing a solution (8) of chlorine dioxide dissolved in water;
- producing demineralised water (10);
- mixing the solution (8) and demineralised water (10) to obtain washing water (11);
- washing fruit and vegetable products (3) with washing water (11).
