发明名称 FISH MEAT ADHESIVE METHOD
摘要 PROBLEM TO BE SOLVED: To produce large-sized fish meat block which is available in many deploying uses without depending on the kind of an objective fish while substantially keeping the quality of raw materials.SOLUTION: There is provided a fish meat adhesive method, in which a plurality of fish flesh pieces at a temperature of 10°C or less are immersed and contacted in water solution containing an electrolyte and food adhesive, a temperature of a contacted surface part of the fish flesh pieces is raised to promote adhesion by electric- heating for obtaining formed fish meat. Spaces between fish meat pieces may be selectively heated to promote adhesion for minimizing damage of fish meat in a short time so that adhesive fish meat may be obtained. In addition, this method may be applied even when the fish flesh pieces at a temperature of 0°C or less are in a frozen condition.
