PROBLEM TO BE SOLVED: To provide a method of manufacturing amino acid (3) in good yield.SOLUTION: A method of manufacturing amino acid (3) is characterized in that at least one chosen from a group consisting of an N-acylamino acid (1) and an N-acylamino acid ammonium salt (2) is brought into contact with ammonia at 115-140°C. Preferably, the contact is performed in the presence of a solvent of 1.0-8.0 times by weight of at least one chosen from the group consisting of the N-acylamino acid (1) and the N-acylamino acid ammonium salt (2). |
