摘要 Tubular porous shreds, readily reconstitutable to mashed potato, are made by cooking potatoes, including sweet potatoes, preferably after slicing, until completely cooked throughout, whipping or beating the cooked potatoes to a homogeneous aerated mash, forming the aerated mash into narrow strips, e.g. by extruding through holes of 0.125 in. diameter, and removing moisture from the surfaces of the strips at a rate greater than that at which the moisture can diffuse from the interior to the surface, e.g. by passing air at a temperature of 180 DEG -280 DEG F at 150-300 ft./min. through a 0.5-0.75 in. layer of the strips. Water, or a solution or suspension of edible substance, exemplified by skim milk and water containing casein, lactose, sucrose, dextrose, or assimilable calcium, magnesium, iron, potassium and phosphorus containing salts, may be whipped into the aerated mash.
