PROBLEM TO BE SOLVED: To provide a method for producing a polysaccharide-based thickener which has high thickening properties even when used in a small amount, small changes in viscosity due to a temperature rise, small changes with time in viscosity at high temperatures, and further excellent emulsification/dispersion stabilization.SOLUTION: In a method for producing a polysaccharide-based thickener, a polysaccharide including fucose, glucose, glucuronic acid and rhamnose as a constituent monosaccharide is subjected to heat treatment at 60-180°C in an alkaline aqueous solution at a pH of 8 or higher, and then is cooled while maintaining a tip speed of a stirring blade at a slow rotational speed of 2.0 m/s or less without being accompanied by strong stirring, or is cooled by being passed through a corrugated tube externally cooled using a refrigerant under pressure without applying a shear force due to stirring. |
