PURPOSE: Spicy seafood noodle soup using fried vegetables, and a producing method thereof are provided to secure the original texture of ingredients after cooking. CONSTITUTION: A producing method of spicy seafood noodle soup using deep-fried and blanched vegetables comprises the following steps: heating oil at 120-150 deg. C; dipping fresh vegetables into the heated oil for 3-8 seconds; separating the vegetables from the oil; and mixing the vegetables with spicy sauce, and meat or seafood. The mixture of spicy sauce and meat or seafood is roasted before adding the fried vegetables. |
