摘要 PROBLEM TO BE SOLVED: To provide a method for easily producing dough for a cake which is a method for producing the dough for a cake produced by adding a liquid aqueous component to bubbling eggs-containing dough and mixing it in which the bubbling eggs-containing dough is hardly defoamed when adding the liquid aqueous component.SOLUTION: A method for producing dough for a cake produced by adding a liquid aqueous component to bubbling eggs-containing dough and mixing it is characterized by mixing the liquid aqueous component with a complex constituted of at least a milk protein, gelling agent and water and subsequently adding the mixture to the bubbling eggs-containing dough.
