<P>PROBLEM TO BE SOLVED: To provide starch granule or cellulose powderimmobilized lipase; to provide a method for producing the same; and to provide a method for producing a fat or fatty oil reaction product. <P>SOLUTION: There are provided the method for producing starch granule or cellulose powder immobilized lipase, comprising mixing cellulose powder or starch granules holding the shapes of the starch granules with enzyme lipase, and binding the lipase to the starch granule or cellulose powder carrier under the maintenance of the powder state to produce the starch granule or cellulose powder immobilized lipase; the starch granule or cellulose powder immobilized lipase produced by the method; a method for producing the fat or fatty oil reaction product, comprising treating fats or fatty oils and/or their hydrolyzates, glucose or oligosaccharides a raw material with the immobilized lipase to produce the fat or fatty oil reaction product; and to provide the fat or fatty oil reaction product. <P>COPYRIGHT: (C)2011,JPO&INPIT |
